Chili Pasta Sauce with Beans & Friday Drinks

On a Friday evening is nice to cook something easy and make a couple of drinks on the side. Because weekends are often full of stuff to do, it’s relaxing to do such things when you have the time.

This chili pepper is going to meet its destiny.

FRIDAY DRINKS

Jaakko had just a basic gin & tonic (with lime). The basic mixture is 1/3 of gin and 2/3 of tonic. Currently we have this Juniper Green Organic Gin that has a nice sweetness in it.

Hanna doesn’t care so much about gin, so for her we had to come up with something different. Luckily, 2 cl of Koskenkorva Vodka, 2 cl of blackcurrant juice extract and filling with tonic. Worked out quite nicely as well!

CHILI PASTA SAUCE WITH BEANS

This spring our friend Anna gave us a chili plant, and a couple of days ago finally the pepper turned red so we could use it. We decided that it could spice up our pasta.

The basic ingredients for the pasta are:

1 red onion
2-3 garlic cloves
some cold pressed canola oil
200 g kidney beans (we used the organic ones from GoGreen)
1 chili pepper
3-4 plum tomatoes (or box of little plum tomatoes) cut into cubes
0,5 dl water
ground paprika
black pepper and salt
a bit of sugar
Alternative: If you do not enjoy chili pepper, you can also spice this dish up with herbs such as oregano, basil, and thyme.

First fry the finely chopped onion and garlic in a little amount of oil. After the onions have got some color, you can add ground paprika and some more oil with kidney beans and sliced chili pepper. Let the beans and pepper fry for a moment, and add the tomato cubes. Add a little bit of water and let the tomatoes soften. Spice up with pepper, salt and little touch of sugar.

If you did not use chili, add the herbs before serving.

We served the sauce with tagliatelle, but you can use spaghetti as well. This time our side salad consisted of wild rucola and pea sprouts. Enjoy!

WHAT TO DRINK WITH IT?

Although pasta usually goes well with red wine, the spicy chili gets a nice balance from a refreshing lager. This time we had just some good old Laitilan Kukko lager.
